What You’ll Need
To make these low-calorie, super yummy peppermint bark meringues, you’ll need two large egg whites that have come to room temperature, along with 1/8 teaspoon each of salt and cream of tartar.

You’ll also need ¾ cup of sugar, ½ teaspoon of vanilla extract, and 1/3 cup plus 2 tablespoons of peppermint candies that have been coarsely crushed. Finally, you’ll need a cup of white chocolate chips on hand.

The Step-by-Step Process
Start by preheating your oven to 250°F and beating your egg whites along with the cream of tartar with the help of a mixer in a large bowl. Use a whisk attachment and beat the mixture until there are soft peaks that begin to form. Then add in the salt and vanilla, along with just 1 tablespoon of sugar at a time as your mixer is running so that everything can become thoroughly blended.

After scraping the inside of your bowl to get everything off the sides, beat the mixture for an additional 15 seconds or so. You should find that the meringue starts to form stiffer peaks, and that’s your signal to stop. Next, fold in your white chocolate chips and candies using a spatula.

Line a couple of baking sheets using parchment paper and then drop your meringue mix onto the sheets by the spoonful. Sprinkle these golf ball sized spoonfuls with the candies that remain, and then bake your meringues until they’re dry and set to the touch. They should, however, still be pale in appearance.

It should take about 30-35 minutes to bake your meringues, but make sure that you switch the pan positions about halfway through to cook them evenly.
